এণ্ডুৰী পিঠা হৈছে ভাৰতৰ প্ৰধানকৈ ওড়িশা অঞ্চলত তৈয়াৰ কৰা এক প্ৰকাৰৰ পিঠা, অৱশ্যে ই উত্তৰ আৰু মধ্য অঞ্চলতো ই জনপ্ৰিয়।[1] এই পিঠাৰ উপাদান হ'ল হালধিৰ পাত, ক'লা জিৰা, চাউলৰ গুড়ি, নাৰিকল, ঘিঁউ, আৰু মাটিমাহৰ দালি।[2] এণ্ডুৰী মূলতঃ প্ৰথমাষ্টমীৰ সময়ত তৈয়াৰ কৰা হয়।[3] [4] ইয়াৰ উপৰিও এই পিঠা মানৱসা গুৰুবাৰৰ সময়তো তৈয়াৰ কৰা হয়।[5] ই হালধীয়া পাতত মেৰিয়াই ল’লে ৰেচক প্ৰভাৱ পৰে। এণ্ডুৰী সাধাৰণতে ডাঙৰ ডাঙৰ মাটিৰ পাত্ৰত ভাপত দিয়া হয়।[6] বাংলাদেশত বনোৱা ভাপত দিয়া পিঠাৰ লগত এই খাদ্যৰ ৰান্ধনীশালৰ সাদৃশ্য আছে। পুৰিৰ জগন্নাথ মন্দিৰত ভগৱান জগন্নাথৰ প্ৰতি উৎসৰ্গিত "শক্ল ধোপা" খাদ্যৰ ভিতৰত এণ্ডুৰী অন্যতম।[7][8][9]
